Traditional Scottish Recipes
- Devilled ChickenHee's a way to spice up chicken with mustard and Worcestershire sauce. The ingredients here are suitable for four servings.

Four thighs or roasting joints of chicken
1 tablespoon of apricot jam
1 teaspoon Dijon mustard
3 tablespoons tomato ketchup
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
pinch of Cayenne pepper
large clove of crushed garlic
salt and freshly ground black pepper to tasteMethod:
Pre-heat the oven to 180C /350F /Gas Mark 4. Season the chicken and spread in a shallow, oven-proof dish
Mix the jam, mustard, pepper and garlic until smooth. Add the tomato ketchup, Worcestershire sauce, soy sauce, salt and pepper and pour over the chicken pieces, making sure they are evenly coated.
Place the lid on the dish and bake in the oven for one hour.
