Traditional Scottish Recipes
- Smoked Goose with Houmous, Olives, Peppadews and Scattered Seeds in Toasted Pitta.

The chefs at the award-winning Rannoch Smokery based in Kenmore, Perthshire have created a wide range of recipes using their smoked venison, poultry, game and salmon products. The recipes have been tried and tested and the company has kindly agreed to allow some of them to be included in the Rampant Scotland recipe section. Here's one for smoked goose with houmous, olives, peppadews and scattered seeds in toasted pitta bread to try!

Ingredients:
Serves 2
2 pita breads toasted
1 small tub good quality houmous
1 pack Rannoch Smokery sliced smoked goose
1 tblsp chopped pitted black olives
8 to 10 peppadew peppers, drained (peppadews are small piquant peppers available in jars at most supermarkets)
1 tblsp seed mix or pumpkin seeds
Small bunch coriander

Method:
Open the pita breads and fill with all the ingredients. Scatter over some seeds and a drizzle of olive oil. Serve immediately with lemon wedges.
