Traditional Scottish Recipes
- "Never Fail" CheesecakeHere is a simple recipe for cheesecake which it is claimed "never fails". The quantities below should provide six servings.

4 ounces (110g) digestive biscuits (Graham crackers)
2 ounces (50g / ½stick) margarine, meltedIngredients (Filling)
1 small tin of mandarin orange segments
1 packet orange (or any other flavour) jelly
¼pint (150ml / ¾cup) double cream
7 ounces (200g / 1 cup scant) Philadelphia light cheese
4 ounces (125g / ¾cup) icing (frosting) sugar, sifted
½ teaspoon vanilla essence
¼ pint (150ml / ¾cup) soured creamMethod:
Crush the biscuits and mix with melted margarine. Press into a greased 8"/20cm loose-based tin. Mix the jelly in ¼ pint of boiling water and leave to cool. Lightly whip the double cream. In a second bowl, mix the cheese, sugar and vanilla essence. add the mixture to the whipped double cream and mix well. Mix in the soured cream and add the jelly and whip. Pour onto the biscuit base and leave to set in the fridge overnight. Top with mandarin oranges or appropriate fruit just before serving.
