Traditional Scottish Recipes
- Raspberry CreamsRaspberries are a popular fruit in Scotland as they grow well in places such as the Carse of Gowrie in Perthshire.

8 ounces /225g raspberries
¼pint / 150ml / double cream
¼pint /150ml / natural yoghurt
1 tablespoon castor (granulated) sugar
1 tablespoon demerara (light brown) sugarMethod:
Put aside four raspberries for decoration and divide the rest into 4 equal portions in individual stemmed dishes. Whip the cream, yoghurt and castor sugar until stiff. Spoon over the raspberries in the glasses, sprinkle the demerara sugar over the cream and top with a raspberry. Chill before serving.
